Skillet Barbecue Pork Chops with Stuffing

  1. Cook vegetables and thyme in 1 Tbsp.
  2. hot oil in medium skillet until vegetables are crisp-tender; remove from skillet.
  3. Add remaining oil and chops to skillet; cook on medium-high heat 4 to 5 min.
  4. on each side or until done (145F).
  5. Meanwhile, prepare stuffing as directed on package.
  6. Spoon onion mixture over chops.
  7. Top with barbecue sauce; cover.
  8. Reduce heat to low; cook until sauce is heated through.
  9. Serve with stuffing.
