Drunken Irishman Glaze
- 5 tablespoons Irish whiskey (Powers or Black Bush recommended)
- 13 cup water
- 3 tablespoons lemon juice
- 1 12 cups pineapple juice, unsweetened
- 1 tablespoon peanut oil
- 3 tablespoons low sodium soy sauce
- 1 14 cups brown sugar
- 34 teaspoon ground ginger
- 3 tablespoons onions (very, very finely chopped)
- 5 garlic cloves (again, very, very finely chopped)
- 1 teaspoon cayenne pepper
- Sweat onions and garlic in peanut oil, be careful to not brown.
- Add liquids, bring to a boil, reduce to a simmer.
- Add brown sugar, ginger, and cayenne.
- Stir frequently until drys are incorporated.
- Be sure to watch heat levels and regulate down as necessary to maintain a low simmer.
- Cook 20-30 minutes until sauce reduces by half.
- Drizzle 2 t.over your favorite food or brush on while cooking to glaze.
