Chicken Meatballs a La Diable
- 1 lb ground chicken
- 1 tablespoon coarse-grain Dijon mustard
- 14 teaspoon crushed red pepper flakes
- 1 egg
- 12 cup breadcrumbs
- Mix the ground chicken, mustard, and red pepper.
- Beat the egg in a bowl or glass measuring cup.
- Add the egg and the breadcrumbs to the chicken mixture.
- Mix well, then shape into 1-inch balls.
- Chill for about 2 hours.
- Bake in the oven at 375 for about 30 minutes, or until cooked through.
