Stir Fried Beef with Vegetables
- 500g rump steak, thinly sliced
- 3/4 cup tomato puree Safeway 1 lb For $1.29 thru 02/09
- 1/2 cup plum sauce
- 1 tablespoon VEGEMITE
- 1 onion, sliced into wedges King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, crushed
- 1 carrot, sliced Target 2 lb For $3.00 thru 02/06
- 1/2 red capsicum, thinly sliced
- 1/2 green capsicum, thinly sliced
- 1 tablespoon sesame seeds, toasted
- Marinate steak in combined tomato puree, plum sauce and Vegemite* for 1 hour or overnight.
- Heat half the oil in a frying pan or wok over high heat.
- Drain beef, reserving marinade, and cook beef in batches for 2 - 3 minutes or until browned and just cooked.
- Remove and set aside.
- Reduce heat to medium-high, add remaining oil to pan and cook onion and garlic for 2 minutes.
- Add carrot and capsicum and cook 3 - 4 minutes until tender.
- Add reserved marinade and beef and heat until sauce thickens.
- Serve with steamed rice or noodles, sprinkled with sesame seeds.
