Artichokes & Lima Beans

  1. In a pot on medium heat, add olive oil and scallions sauteing until scallion whites are translucent.
  2. Add lima beans and dill and saute for 2 more minutes.
  3. Add water, salt and pepper and bring to a boil.
  4. Add artichokes and cook for 4o minutes.
  5. Serve with your favorite protein, fish or lamb, or enjoy on its own as a main meal.
