Ginger-Glazed Chicken

  1. Place chicken in a zip lock bag and add the soy sauce, HALF of the garlic, ginger and chile flakes.
  2. Toss to coat.
  3. Refrigerate for several hours or overnight.
  4. Heat oil over medium-high heat.
  5. Remove chicken from bag and discard marinade.
  6. Brown chicken on both sides for about 10 minutes.
  7. Lower heat and cook an additional 15 minutes until chicken is cooked through.
  8. Remove chicken to a plate.
  9. In same pan, over low heat, add sugar, the remaining garlic, ginger and chile flakes along with 2 tbsp water.
  10. Raise heat to med-high and cook until sugar melts and the sauce becomes thickened, about 2 minutes.
  11. Add fish sauce and any juices from the chicken plate.
  12. Cook another minute.
  13. Return chicken to pan and coat with sauce.
  14. Garnish if desired.
  15. Enjoy!
