Mint Julep Pineapple
- 2 tablespoons Bourbon
- 14 cup finely chopped fresh mint, plus more (to garnish)
- 1 tablespoon sugar
- 1 medium pineapple, about 2 Lbs, extra sweet, trimmed, cored, cut crosswise into 1/8 slices
- Mix ingredients, allow 20 minutes for flavors to develop.
- Can keep in fridge overnight.
