Chipotle Chicken with Rice and Potatoes
- 4 chicken breasts
- 4 large potatoes
- 1 medium white onion
- 1 can Chipotle peppers
- 1 can tomato sauce
- 1/2 stick butter
- 1 large avocado
- 2 clove garlic
- dash Canola oil
- 1 white rice
- Pour the Chipotle peppers, tomato sauce and minced garlic into a pot and mix to get the sauce started.
- Now let's chop our vegetables so they are ready to grill.
- Now we hit them with canola oil, salt, pepper, smoked paprika and chili powder
- We hit the chicken breasts with the same oil and spices
- We're going to char all the meat and veg and a hot grill for more smokey flavors
- Once we get them nice and charred, remove from direct heat.
- Now place chicken over direct heat
- Everything charred and a little under cooked.
- It's going to finish in the sauce.
- Let's chop the charred vegetables
- Pour in 1 cup rice, potatoes, and top with 1 cup water
- Before we add in the chicken let's season it one more time with our spices
- Before we toss in the chicken.
- Let's add our butter
- Add the chicken and finish when the rice is done
- Fan an avocado over the top and enjoy.
