Chipotle Chicken with Rice and Potatoes

  1. Pour the Chipotle peppers, tomato sauce and minced garlic into a pot and mix to get the sauce started.
  2. Now let's chop our vegetables so they are ready to grill.
  3. Now we hit them with canola oil, salt, pepper, smoked paprika and chili powder
  4. We hit the chicken breasts with the same oil and spices
  5. We're going to char all the meat and veg and a hot grill for more smokey flavors
  6. Once we get them nice and charred, remove from direct heat.
  7. Now place chicken over direct heat
  8. Everything charred and a little under cooked.
  9. It's going to finish in the sauce.
  10. Let's chop the charred vegetables
  11. Pour in 1 cup rice, potatoes, and top with 1 cup water
  12. Before we add in the chicken let's season it one more time with our spices
  13. Before we toss in the chicken.
  14. Let's add our butter
  15. Add the chicken and finish when the rice is done
  16. Fan an avocado over the top and enjoy.
