Randi'S Chocolate Chip Oatmeal Cookies
- 1 c. butter
- 1/2 c. sugar
- 3/4 c. brown sugar, packed
- 1 tsp. vanilla
- 1 egg
- 1 c. unsifted flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/8 tsp. nutmeg
- 3 c. uncooked oats
- 1 bag (12 oz.) Ghiradelli Semi Sweet Chocolate Chips
- Preheat oven to 375 degrees. In a large bowl, beat butter with sugar and brown sugar at medium speed until creamy and lightened in color (about 4 minutes). Add vanilla and egg, mix on low speed until incorporated. Stir in oats. Fold in chocolate chips. Drop by rounded tablespoons onto ungreased baking sheets. Bake 8 to 9 minutes for chewy cookies, 10 to 11 minutes for crisp cookies. Cool 1 minute on baking sheet; remove to wire cooking racks. Store in tightly covered container.
