Banana Beignets With Banana Caramel Sauce Recipe

  1. * Note: Add in sliced bananas and rum-soaked raisins to your favorite caramel sauce.
  2. In a deep-fryer heat oil over medium-high heat to 365 degrees.
  3. Into a bowl sift together flour, baking pwdr and salt.
  4. In a large bowl whisk together Large eggs, banana and lowfat milk.
  5. Using a wooden spoon, beat dry ingredients into egg mix till a biscuit-like dough forms.
  6. Lightly flour work surface and turn out dough.
  7. Pat dough out to a 1/4-inch thick round.
  8. Use a 2 1/2- to 3-inch biscuit cutter to cut out desired shapes.
  9. Reroll scraps.
  10. Fry beignets in small batches about 4 min till golden brown, turning several times to color proportionately.
  11. Using a slotted spoon gently remove beignets and drain thoroughly on paper towels.
  12. To serve, arrange 3 beignets on each of 4 dessert plates and drizzle with Banana-Raisin Caramel Sauce.
  13. Shake powdered sugar over all and serve.
  14. This recipe yields 4 servings, about 1 dozen beignets.
