Eggnog Caramel Surprise Cookies

  1. Combine the butter and sugars in a mixer until light and fluffy.
  2. Slowly add eggs and vanilla until thoroughly combined.
  3. Mix in flour, salt, baking soda, clove and nutmeg.
  4. Cover and chill for 3 to 4 hours.
  5. While chilling, unwrap caramel squares and cut in half.
  6. Divide chilled dough into 1/2 tablespoon size balls.
  7. Flatten the balls between your palms, and place a caramel piece in the center.
  8. Pull the dough around the caramel piece, and round into a ball.
  9. Set thickest dough part down on greased cookie sheet 2-3 inches apart.
  10. Bake at 300 degrees for 10-12 minutes.
  11. Allow cookies to cool slightly before removing from baking sheet.
  12. Drizzle melted semi-sweet chocolate on top of cooled cookies.
  13. Enjoy!
