Corn W/ Zucchini & Chiles
- 1 lb frozen sweet corn; thawed
- 1 zucchini; small dice
- 3 small cans diced green chiles
- 1 bundle cilantro; chiffonade
- 1 stick butter
- 1 1/2 tsp cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1 large pinch of sugar
- 1 salt and black pepper; to taste
- Melt butter in a large saute pan.
- Add zucchini and a pinch of salt.
- Saute until nearly caramelized.
- Add corn and diced chiles.
- Season.
- Toss.
- Heat thoroughly.
- Add cilantro at the end.
- Toss.
- Serve.
