Toasted Pumpkin Seeds

  1. Thoroughly rinse the pumpkin seeds, rubbing and using your fingers to remove any pulp.
  2. Drain seeds and spread on a cookie sheet to dry overnight.
  3. Pre-heat oven to 250 degrees F and line a baking sheet with foil.
  4. Add the pumpkin seeds to a small bowl.
  5. Toss with the olive oil.
  6. Sprinkle with salt, garlic powder and other seasonings to taste and toss to coat.
  7. Spread onto the prepared baking sheet.
  8. Bake for about 1 hour, tossing every 15 minutes until the seeds turn golden brown.
  9. Place the baking sheet on a wire rack and cool completely before consuming.
  10. Store in an airtight container for up to 3 months.
