Ratatouille
- 1 eggplant
- 1 summer squash
- 1 zucchini
- 1 Vidalia onion
- 1 large green pepper
- 1 red pepper
- 1 tomato
- 1 dash crushed red pepper
- its an easy, but repetitive each vegetable you add have to add oil to the bottom and season with salt and pepper
- chop all the vegs the same size.
- in about 1in cubes
- in a big pot, coat the bottom with olive oil..
- turn the heat to med-high heat.. and get the oil nice and hot.. add the eggplant, cook until the eggplant is soft.
- about 10 minutes.
- take the eggplant out.. and rest it on a plate.. add more olive oil and add zucchini, cook until soft
- take zucchini out with the eggplant, add more oil and the summer squash
- once the squash is soften dump it with the rest of the cooked vegetables.. add more oil cook onion,green and red pepper.
- cook until the onions are transparent add all the vegetable back in the pot.. sprinkle in some red pepper flakes for some heat to the dish..
- cook the vegetables together for about 10 minutes..
- Voila!
- your ratatouille is complete.. it taste amazing with my baked chicken..
