Green Tomato Casserole
- 3 whole Green Tomatoes
- 1 teaspoon Granulated Sugar
- 1/2 teaspoons Salt
- 1/2 teaspoons Cracked Black Pepper
- 1/2 teaspoons Cajun Seasoning (i.e. Slap Ya Mama)
- 1 cup Marinara Sauce
- 1 whole Sliced Sweet Onion (i.e. Vidalia)
- 1/2 cups Shredded Hot Pepper Cheese
- 1 whole Sleeve Of Ritz Crackers, Crushed (The Standard Size Sleeve, From A 15 Oz. Box)
- 1 cup Shredded Cheese (Sharp Or Italian Blend)

- Preheat oven to 400 F. Grease an 8x10 rectangular pan and set it aside.
- 2.
- Slice green tomatoes into 1/4 slices.
- Layer them into the greased pan (overlapping slightly is okay.)
- Combine the seasonings (sugar, salt, pepper and Cajun) in a small bowl then sprinkle the top of the tomatoes with half of the spices.

- Spread half of the marinara sauce on top of the tomatoes.
- Just spoon a little on each tomato.
- Layer all of the sliced onion next.
- Cover with all of the shredded hot pepper cheese.

- Layer the remaining tomato slices on top of that and then sprinkle the top with remaining seasoning.
- Top with the remaining marinara sauce.
- Spread the crushed crackers over the sauce and top with 1 cup of shredded cheese of your choice.
- I like to use a combination of sharp cheddar and an Italian blend.
- 5.
- Cover with foil.
- Bake for 30 minutes.
- Remove foil and continue baking for 15 additional minutes.
- Cool for 5 minutes and serve.
- Cooks Notes: Double recipe for a 9 x 13 pan.
