Blueberry Buckwheat Pancakes
- 1/2 cup Buckwheat flour
- 1/2 cup Whole wheat flour
- 1 tsp Baking powder
- 1/3 tsp Baking soda
- 1/4 tsp Salt
- 1 1/4 cup Coconut milk
- 1 tbsp Honey
- 2 small eggs
- 1 1/2 tbsp Sunflower oil
- 1 cup Blueberries
- Mix all dry ingredients in medium bowl
- In another bowl, beat all wet ingredients
- Stir wet ingredients into dry just until mixed
- Ladle batter in 1/4 cups onto preheated large nonstick skillet
- Add 5-6 blueberries each pancake
- Flip and serve with blueberry syrup
