Beef Fillet with Creamy Salsa Verde

  1. SEASON the beef well with salt and pepper.
  2. Spray a non stick frying pan with oil and brown the beef well on all sides.
  3. Transfer to a baking dish and bake in a hot oven 200C for 30-40 minutes or until cooked to your liking.
  4. Wrap in a double thickness of foil and rest for 10 minutes.
  5. COMBINE in a food processor the anchovies, garlic, herbs, olives, capers gherkin, mayonnaise and PHILLY and process until smooth.
  6. SLICE the beef thinly and place onto serving plates with a selection of roasted or chargrilled vegetables.
  7. Spoon over a little Creamy Salsa Verde and serve immediately.
  8. HANDY TIP: The beef is also delicious served cold with chilled Creamy Salsa Verde if preferred.
  9. You may also choose to heat the Creamy Salsa Verde very gently to serve warm.
