Chicken Casserole for a Crowd
- 10 cups chicken, diced and cooked
- 10 cups celery, chopped
- 2 bunches green onions with tops, sliced
- 2 cans (4 oz. each) chopped green chiles
- 1 can (5-3/4 oz.) pitted ripe olives, drained and sliced
- 2 cups slivered almonds
- 5 cups shredded cheddar cheese, divided
- 2 cups mayonaise
- 2 cups sour cream
- 5 cups potato chips, crushed
- Combine the first 6 ingredients.
- Add 2 cups cheese.
- Mix mayonaise and sour cream; add to chicken mixture and toss.
- Spoon into 2 greased 13x9x2" baking dishes.
- Sprinkle with chips.
- Top with remaining cheese.
- Bake uncovered, at 350F, for 20-25 minutes or until hot.
