Blueberry Bars
- 4 cups fresh blueberries
- 34 cup sugar
- 13 cup water
- 2 tablespoons cornstarch
- 12 teaspoon salt
- 2 cups flour
- 1 teaspoon baking soda
- baking powder
- 1 cup butter
- 1 cup brown sugar, packed
- 2 cups quick-cooking oats
- In a large saucepan, combine blueberries, sugar, water, corn starch and salt.
- Cook over medium heat until thickened, about 10 minutes.
- Set aside.
- In a large bowl, sift together flour, baking soda, and baking powder.
- Cut in butter with a pastry cutter or two knives.
- Stir in brown sugar and oats.
- Press half into 13 x 9 inch baking dish that has been greased.
- Pour blueberry mixture on top; top with remaining flour mixture.
- Bake at 350* for 45 minutes, until top is slightly browned.
- Let cool and cut into bars.
