Grilled Banana Pepper and Feta Salad
- 4 large banana peppers
- 2 tablespoons feta (crumbled)
- 1 tablespoon extra virgin olive oil
- 12 teaspoon dried oregano
- 12 lemon, juice of
- Wash peppers, leaving whole, with stems.
- Arrange on broil pan or lay on preheated grill.
- Grill (or broil) the peppers until they are charred on all sides and peel.
- Place cooked peppers in a glass 13x9 casserole with tongs and top with another casserole the same size to "sweat" the skins for easier peeling.
- (Slice and remove seeds if desired.

- Arrange on a plate and top with the feta, drizzle with olive oil, sprinkle with oregano and hit it with a splash of lemon.
