Homemade Banana Layer Cake

  1. Grease and flour two 9x1 1/2-inch round baking pans; set aside.
  2. In a large mixing bowl combine flour, sugar, baking powder, baking soda and salt.
  3. Add banana, buttermilk or sour milk, shortening, eggs and vanilla.
  4. Beat with an electric mixer on low speed until combined.
  5. Beat on medium speed for 3 minutes.
  6. Pour into prepared pans.
  7. Bake in a 350F (180C) F oven 30 minutes or until a toothpick inserted near center comes out clean.
  8. Cool on wire racks 10 minutes.
  9. Remove from pans; cool completely on rackes.
