Homemade Banana Layer Cake
- 2 cups flour, all-purpose
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup bananas ripe, mashed
- 1/2 cup buttermilk
- 1/2 cup vegetable shortening
- 2 large eggs
- 1 teaspoon vanilla extract
- Grease and flour two 9x1 1/2-inch round baking pans; set aside.
- In a large mixing bowl combine flour, sugar, baking powder, baking soda and salt.
- Add banana, buttermilk or sour milk, shortening, eggs and vanilla.
- Beat with an electric mixer on low speed until combined.
- Beat on medium speed for 3 minutes.
- Pour into prepared pans.
- Bake in a 350F (180C) F oven 30 minutes or until a toothpick inserted near center comes out clean.
- Cool on wire racks 10 minutes.
- Remove from pans; cool completely on rackes.
