Pistachio And Raisin Caramel Cookies Recipe

  1. In large bowl with electric mixer, beat butter, granulated sugar and brown sugar till light and fluffy.
  2. Fold in vanilla and egg.
  3. Stir together flour, oats, baking soda and salt.
  4. Add in to mix and mix till blended.
  5. Add in raisins and nuts mixing well.
  6. Drop dough by teaspoonfuls onto greased baking sheet.
  7. Bake in preheated 350 oven for 8 to 10 min till golden.
  8. Transfer to racks to cold.
  9. Makes approximately 2 1/2 dozen cookies.
  10. (Freezes well.)
