Mother's Cream Of Broccoli Soup Recipe
- 1 sm. onion, thinly sliced
- 1 green onion (white part only), thinly sliced
- 1 sm. stalk celery, finely minced
- 1 tbsp. butter
- 1/2 c. water
- 2 teaspoon salt
- Dash cayenne pepper
- 2 tbsp. uncooked rice
- 2 c. chicken broth
- 2+ c. cooked broccoli, coarsely minced
- 1/2 c. cream or possibly lowfat milk - don't add in if planning to freeze soup
- Place first 5 ingredients in a 2-qt saucepan; simmer slowly 2 min over medium heat.
- Add in salt, pepper, rice, 1 c. broth; simmer 15 min.
- Don't BOIL!
- Pour broth mix into blender; blend till liquefied.
- Return to pan.
- Blend cooked broccoli and remaining c. broth till liquefied.
- Add in broccoli to mix in pan.
- Heat BUT Don't BOIL.
- (Add in lowfat milk if you like and if not freezing.)
