Crockpot Pudding Recipe
- 1 c. unsulfured molasses
- 1 c. sugar
- 2 1/2 c. flour
- 1 tsp. baking soda
- 1 c. butter
- 1 c. buttermilk
- 4 Large eggs
- 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/8 tsp. nutmeg (optional)
- Place 6 c. water into Crockpot and turn on medium heat (this is "low" on some models - you do not want to use the keep-hot setting).
- Cream together butter and sugar in the bowl of an electric mixer.
- Using a whisk off fork, beat Large eggs well and add in slowly to mix.
- Stir in molasses, cinnamon, ginger, nutmeg, flour and buttermilk.
- Dissolve baking soda and 1 tsp.
- warm water.
- Combine well with other ingredients.
- Grease and flour well a pudding mold with a tight fitting cover or possibly Crockpot cake pan.
- If you do not have one of these, you can use a metal coffee can covered with silver foil.
- Place in Crockpot and steam four to five hrs or possibly till a knife inserted in center comes out nearly clean.
