Italian Spaghetti Pie
- 220 g spaghetti, uncooked
- 2 eggs, lightly beaten
- 2 Tbsp. non-hydrogenated margarine
- 1/2 cup chopped green peppers
- 1/3 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup light sour cream
- 1 lb. (450 g) Italian sausage, casings removed, crumbled
- 1 can (5.5 fl oz/156 mL) tomato paste
- 1 cup water
- 1 cup Cracker Barrel Shredded Light 4 Cheese Italiano Cheese
- Heat oven to 350F.
- Cook spaghetti as directed on package, omitting salt; drain.
- Place in large bowl.
- Add eggs; mix lightly.
- Press onto bottom and up side of 10-inch pie plate sprayed with cooking spray.
- Melt margarine in large skillet.
- Add peppers and onions; cook and stir until tender.
- Remove from heat.
- Stir in sour cream; spoon into spaghetti shell.
- Set aside.
- Brown sausage; drain.
- Stir in tomato paste and water; simmer 10 min.
- ; stirring occasionally.
- Spoon over sour cream mixture.
- Bake 25 min.
- Top with shredded cheese; bake 10 min.
- or until cheese is melted.
- Let stand 5 min.
- before cutting into wedges to serve.
