Stir Fried Ginger Chicken
- 4 tbsp vegetable oil
- 2 chicken breast bitesize pieces
- 2 tbsp Thai garlic coarsely chopped (less English)
- 1/2 cup chicken stock
- 150 grams ginger peeled and julienned
- 2 tbsp soy sauce light
- 4 tbsp oyster sauce
- 4 tsp granulated sugar
- 10 spring onions into one inch segments
- 2 red spur chillies chopped
- 1 more spring onion and red chillies to garnish
- Heat a pan over medium heat until smoking hot.
- Swirl in the oil, add the garlic and saute until golden brown.
- Add chicken for 1-2 minutes.
- Add the stock and ginger then the soy sauce, oyster sauce and sugar for 2-3 minutes.
- Add the spring onions and chillies for one minute.
- Garnish with spring onion and chillies.
- Serve with Thai fragrant rice.
