Nutty Apricot Cookies
- 2 cups confectioners' sugar
- 12 cup flour
- 12 teaspoon baking powder
- 12 cup egg white (3-4)
- 2 cups pecans, chopped
- 12 cup dried apricot, chopped
- In mixing bowl, combine sugar, flour, baking powder and egg whites.
- Add nuts and apricots; mix well.
- Drop by spoonsful onto well-greased baking sheets.
- Bake at 325F for 15-18 minutes.
- Drizzle tops, if desired, with a mixture of confectioners' sugar, lemon juice, and water.
