Twice Baked Potatoes

  1. Cook raw potatoes at High 10 to 12 minutes; let stand 3 to 5 minutes after cooking.
  2. You may need
  3. to turn potatoes over after 5 to 6 minutes.
  4. Cut a thin slice (lengthwise) from each potato. Scoop out cooked potato, leaving a thin shell.
  5. In small bowl, combine potato, cottage cheese, oleo, egg, onion and milk mixture, salt and pepper; mix until smooth.
  6. Spoon potato mixture into shell; sprinkle with paprika.
  7. Arrange potatoes in a circle in a microwavable dish.
  8. Cover with wax paper.
  9. Cook at Medium 4 minutes.
  10. Let stand uncovered 3 minutes before serving.
  11. Contains approximately 2 to 3 grams fat per potato.
  12. Makes 2 to 4 servings.
