Creamed Tuna& Peas/English Muffins

  1. In a small saucepan, heat oil over medium heat.
  2. Add flour, salt, pepper and bay leaf, stirring constantly, 1 minute.
  3. Gradually add milk and sherry, stirring constantly, until mixture thickens, 2 to 3 minutes.
  4. Remove from heat and discard bay leaf.
  5. Meanwhile, cook peas half as long as stated on the package; drain.
  6. Flake tuna with a fork.
  7. Add peas and tuna to sauce and mix well.
  8. Heat thoroughly.
  9. Place 3/4 cup mixture over each split English muffin and serve immediately.
