Vegetable and Ham Soup

  1. Melt butter in Dutch oven over medium heat.
  2. Add onion; saute until tender.
  3. Add remaining ingredients and 5 cups water.
  4. Bring to boil over medium-high heat.
  5. REduce heat to simmer.
  6. Cook, uncovered, for 30 minutes, or until potato is tender.
