Florentines

  1. Combine in a bowl slightly-crushed cornflakes, finely chopped cherries, sultanas, peanuts and condensed milk, mix well.
  2. Line cookie sheets with greased grease-proof paper, dust lightly with flour.
  3. Drop teaspoonsful onto cooking sheet.
  4. Bake at 350F for 8 minutes or until edges begin to turn brown.
  5. Leave on cooking sheet to cool.
  6. Use a spatula to remove when cold.
  7. Melt chopped chocolate in top of double boiler over simmering water.
  8. Using a spatula, spread chocolate on base of cooled florentine.
  9. Mark wavy lines on chocolate with a fork.
  10. Let chocolate set.
