Sweet-Spicy Sweet Potato and Pork
- 2 Sweet Potato (medium)
- 200 grams Pork (block, thinly sliced, etc.)
- 1 pack Shimeji mushrooms
- 200 ml Water
- 2 tsp Dashi stock granules
- 3 tbsp Sake
- 3 tbsp Mirin
- 2 tbsp Sugar
- 2 tbsp Soy sauce
- Chop the sweet potatoes roughly into small sizes, and the pork into bite-sized pieces.
- Discard the stiff roots of the shimeji mushrooms and shred them apart.
- Heat some oil (unlisted) in a pot and cook the pork.
- Here, I used a block of pork shoulder roast.
- Add sweet potatoes to the pot from step 2.
- Add shimeji mushrooms and ingredients - in listed order - to the pot from step 3.
- Cover the pot and simmer over medium to high heat.
- Stir-up from the bottom while cooking.
- It's done when the sauce has reduced Scatter some green scallions if you wish.
- If you set it aside briefly with a lid on, the flavor really soaks in.
