Tangy Couscous With Black Beans and Corn
- 1 cup couscous
- 1 12 cups boiling water
- 2 tomatoes, diced
- 1 bell pepper, diced
- 4 scallions, chopped
- 1 (16 ounce) can black beans, rinsed
- 1 (16 ounce) can corn, drained
- 2 tablespoons chopped cilantro
- 12 teaspoon salt
- 12 teaspoon pepper
- 1 lime, juice of
- Cook the cous cous with the water.
- Fluff with a fork.
- Combine with the remaining ingredients and toss thoroughly.
- Chill for 30 minutes before serving to allow flavors to mingle.
