Mango Lassi
- 1/2 chopped ripe mango
- 1 cup low-fat plain yogurt
- 1/4 cup freshly-squeezed orange juice
- 2 tablespoons Spiced Simple Syrup, recipe follows
- Pinch fine salt
- 1/2 cup granulated sugar
- 1/2 cup water
- 4 green cardamom pods, cracked
- 2 allspice berries
- 1 cinnamon stick
- 1 whole clove
- Puree all ingredients in a blender until smooth.
- Refrigerate until ready to serve.
- Put all the ingredients in a small sauce pan, and bring to a boil, stirring occasionally.
- When sugar is dissolved, remove from heat.
- Cool, strain, and refrigerate.
- Yield: about 2/3 cup
