Jalapeno Popper Chicken
- 6 Boneless Skinless Chicken breasts
- 1 8oz package Cream Cheese
- 1 cup Chedder cheese
- 1/2 cup Shredded parmesan cheese
- 1/2 cup mayo
- 3 slice of bacon
- 2 Jalapenos, deseeded, deveined and diced
- 1/4 cup onion
- 1/2 cup shredded Parmesan Cheese
- 1/2 cup crushed ritz crackers (half a sleeve)
- 4 tbsp butter, melted.
- Bake chicken in a 9x13 dish on 425 until cooked thru.
- while chicken is cooking.
- Combine diced bacon, onion, and jalapenos to a skillet and cook until bacon is crisp and veggies are tender.
- Combine bacon mixture in a bowl with the cream cheese, parm, mayo, and chedder cheeses.
- also combine in a seperate bowl the topping ingredients.
- When chicken is cooked combine the cheese mixture on top then top with the topping.
- place in a 350F oven for 15min.
