Microwave Yam's Recipe
- 3 lbs. sweet potatoes or possibly 3 (16 ounce.) cans, liquid removed
- 3/4 c. light brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 (8 1/4 ounce.) can crushed pineapple, liquid removed
- 2 teaspoon grated orange peel
- 2 tbsp. butter and 2 tbsp. molasses
- 1/2 c. minced pecans
- Place sliced sweet potatoes in glass 8 x 12 inch buttered casserole dish.
- Microwave on roast 4 min on high with lid on.
- Next place a 1 1/2 qt dish with sugar, cinnamon, pineapple and juice, molasses and salt in microwave on high 4 to 5 min.
- Pour over sweet potatoes.
- Microwave on roast 5 to 7 min.
- Serves 6 or possibly 8.
