Jambalaya
- 1 lb. polish sausage or kielbasa
- 2 c. ham
- 2 Tbsp. butter
- 2 c. chicken
- 2 Tbsp. brown sugar
- 1 c. celery
- 1 bell pepper, chopped
- 1 c. onion, chopped
- 1/2 tsp. red pepper
- 1 tsp. black pepper
- 1 tsp. salt
- 2 bay leaves
- 1/2 tsp. thyme
- 1/2 tsp. sage
- 2 c. tomatoes
- 2 cloves garlic, minced
- 2 1/2 c. chicken stock
- 1 1/2 c. rice
- Saute sausage and ham in butter for 5 minutes.tdd chicken and brown sugar; cook 5 more minutes.
- Add celery, bell pepper, onion; cook 5 minutes more.
- Add all spices and saute 1 minute. Mix in tomatoes and garlic.
- Cook for an additional minute or two. Combine everything with chicken stock and rice in a Dutch oven. Cook at 350u0b0 for 1 hour or until all liquid has been absorbed.
