Peaches with Fruit Sauce
- 1 cup frozen blueberries, thawed
- 13 cup grape fruit spread
- 1 cup apricot, canned,chopped and drained
- 13 cup apricot fruit spread
- 1 cup peach nectar
- 1 cup water
- 2 vanilla beans, split lengthwise
- 3 large peaches, peeled,pitted,and sliced
- 2 cups vanilla ice cream
- Combine blueberries and grape fruit spread in container of an electric blender; cover and process until smooth.
- Strain puree; discard skins.
- Cover and chill.
- Combine apricots and apricot fruit spread in container of electric blender; cover and process until smooth.
- Strain puree; discard pulp.
- Cover and chill.
- Combine nectar, water, and vanilla beans in a nonstick skillet.
- Bring to a boil; add peaches.
- Cover, reduce heat, and simmer 10 minutes or until tender.
- Let cool; cover and chill.
- Remove peaches from liquid; arrange on serving plates.
- Top each with about 1/3 cup ice cream.
- Spoon purees around ice cream.
- Serve immediately.
