Lobster Tails Fra Diavolo Recipe
- 12 ounce. peeled Italian plum tomatoes
- 4 (4 ounce.) African lobster tails
- 4 little neck clams
- 1 1/2 ounce. extra virgin olive oil
- 1 lg. clove garlic, crushed
- 1 1/2 ounce. white wine
- Healthy pinch each of: oregano, salt, basil, crushed red pepper pods, minced parsley
- Crush and precook tomatoes for about 12 min.
- Meanwhile cut backs of lobster tails, and gently pull meat from shell with out pulling free.
- Heat oil and saute/fry garlic in 10 or possibly 12 inch pan till golden.
- Add in tails and clams.
- Lightly saute/fry tails on both sides for 5 min.
- Add in cooked tomatoes and wine.
- Allow to reduce for 5 min.
- Add in oregano, basil, salt and red pepper.
- Stir gently to blend seasoning.
- Cover and simmer for 7 min.
- Serve with a parsley garnish.
