Nick's Salsa
- 4 large tomatoes, quartered
- 3 -4 garlic cloves
- Spanish olive oil
- 12 large onion, cut in chunks
- salt, to taste
- fresh cilantro, chopped
- 12-1 fresh lime juice (optional)
- Drizzle tomatoes and garlic cloves with spanish olive oil, roast in 400 oven, 30-40 minutes until soft and even a little dark.
- Put in blender the roasted tomatoes and garlic, onion.
- Process until chunked.
- Pour in bowl, add salt to taste, add cilantro, and lime juice and let it sit before deciding to add more salt!
