Mexi Corn Casserole`
- 3 can whole drained kernal corn
- 2/3 cup mayonnaise
- 1/2 cup sour cream
- 3 tbsp tanjin fruit seasoning
- 1 tsp black pepper
- 1 tsp parsley flakes
- 1 diced roma tomatoe
- 1/2 red bellpepper
- 2 tbsp chopped cilantro
- 1/2 cup cotija cheese or parmesan cheese
- 1/2 diced jalapeno
- 1 tab melted butter
- drain your corn add to microwaveable dish.
- Dice all veggies add to corn with all other ingredients.
- stir well heat microwave 12 minutes
- you can also bake in oven 350 20 minutes
- you can sprinkle more freshly graded parmesan cheese to top when it comes out and sprinkle more seasoning to top.
