Cranberry Chicken
- 4 pieces Chicken Breast
- 1 can (16 Oz. Size) Whole Cranberry Sauce
- 1/2 cups Raspberry Vinaigrette Or Trader Joe's Raspberry And Gorgonzola Salad Dressing
- 1/2 cups Crumbled Gorgonzola Plus Extra For Garnish
- 1/2 cups Candied Walnuts
- In a mixing bowl, mix the cranberries, the salad dressing and some Gorgonzola (if you love it like me) until its all nice and creamy.
- Place the chicken in a casserole dish and pour the cranberry mixture on top.
- Sprinkle with candied walnuts.
- Bake in the oven at 35oF for 45 minutes or so, until the chicken is no longer pink.
- About 5 minutes before its done, you can sprinkle more cheese on top to let it melt a bit.
- Thats it!
- Adjust the amounts until you find something you like, and this is easily doubled for more people.
