Easy Summer Pasta with Sausage
- 1 pound Spaghettini (or Other Long Pasta Of Your Choice)
- 1 whole Orange Or Yellow Pepper
- 2 whole Medium Ripe Tomatoes
- 4 whole Green Onions
- 1 pound Sausage Meat (turkey Sausage Works Great Too)
- 4 cups Fresh Baby Spinach
- 1/2 cups Basil Parmesan Salad Dressing (or Another Oil Based Dressing Of Your Choice)
- 1/2 cups Sliced Black Olives
- 1 cup Crumbled Feta
- Salt And Pepper, to taste
- 1.
- Prepare pasta according to package directions.
- 2.
- Remove the stem and seeds from the peppers.
- Chop up the pepper and tomatoes.
- Slice the green onions diagonally.
- 3.
- Meanwhile, brown the sausage in a skillet over medium heat.
- 4.
- Once the meat is browned and cooked through, add the peppers and dressing and let it simmer for a few minutes until the peppers soften.
- 5.
- Turn off the heat and add the spinach.
- Stir in gently until wilted.
- 6.
- Drain the pasta and place it in a large serving dish.
- 7.
- Layer the meat mixture over the pasta and then add the tomatoes, green onions, olives and feta.
- 8.
- Salt and pepper to taste.
- You can add extra dressing to your serving if needed.
