Pickled Red Onions

  1. In a jar with a tight-fitting lid, combine the onion, lime juice, habanero and a pinch of salt.
  2. Cover and shake gently.
  3. Refrigerate overnight, gently shaking the jar occasionally.
  4. Drain and season with salt.
