Asparagus With An Orange Balsamic Vinegar Recipe
- 2 bn Asparagus -- green, trimmed
- 3 Tbsp. Balsamic vinegar
- 1 x Orange -- juiced
- 1 x Orange -- zest
- 1 Tbsp. Mustard
- 1 x Garlic clove -- chopped Salt, pepper
- 2 Tbsp. Extra virgin extra virgin olive oil
- 1 bn Chives -- minced
- 6 slc Orange

- Steam the asparagus (approximately 8 minutes.).
- Put immediately under running water and drain.
- 2.
- Preparation of the dressing : put in a mixing bowl the vinegar, the orange juice, the zest, the mustard, salt and pepper.
- Mix.
- Add in the extra virgin olive oil.
- Mix.
- Add in the minced chives.
- 3.
- Put the asparagus on individual plates.
- Pour some vinaigrette over the asparagus.
- Garnish with chives and slices of orange.
