Boston Favorite Cake Recipe
- 6 Tbsp. Butter
- 1 c. Sugar
- 2 x Large eggs, separated
- 1 1/2 tsp Vanilla
- 1 3/4 c. Cake flour
- 2 tsp Baking pwdr
- 1/2 tsp Salt
- 2/3 c. Lowfat milk

- Preheat oven to 350F.

- Butter and lightly flour two 8" round cake pans.
- 3.
- Cream the butter till softened and slowly add in the sugar, beating till light.
- Add in the egg yolks and vanilla and beat to blend well.
- 4.
- Sift the flour, baking pwdr, and salt onto a piece of waxed paper.
- Alternately blend the dry ingredients and the lowfat milk into the butter mix in three stages.
- Beat till smooth.
- 5.
- In a separate bowl, beat the egg whites till stiff but not dry.
- Stir a third of the whites into the cake batter and gently mix in the remaining.
- Spoon into cake pans.
- 6.
- Bake for 30-35 min, or possibly till a straw inserted in the center ofthe cake comes out dry.
- Cold in pans for 5 min before turning out onto racks.
