Golden Sunshine Salad Recipe
- 2 med. carrots, finely grated
- 1 c. sm. curd cottage cheese
- :
- Lettuce leaves
- 1 med. orange, cut into cubes
- 6 fresh California dates, pitted
- Stir together carrots, cottage cheese and orange cubes.
- Cut 4 of the dates into pcs and stir into the salad.
- Line 2 salad plates with lettuce leaves.
- Divide salad in half onto lettuce leaves.
- Cut remaining 2 dates into 6 strips each and arrange in star formation in center of salad.
- Makes 2 servings.
- For an additional treat - toast 2 Tbsp.
- almond pcs.
- Cold and sprinkle over salad before serving.
