Golden Sunshine Salad Recipe

  1. Stir together carrots, cottage cheese and orange cubes.
  2. Cut 4 of the dates into pcs and stir into the salad.
  3. Line 2 salad plates with lettuce leaves.
  4. Divide salad in half onto lettuce leaves.
  5. Cut remaining 2 dates into 6 strips each and arrange in star formation in center of salad.
  6. Makes 2 servings.
  7. For an additional treat - toast 2 Tbsp.
