Shiso Sandwiched in Pan-Fried Chicken
- 200 grams Chicken thighs
- 3 leaves Shiso leaves
- 1 tbsp Soy sauce
- 1 tbsp Sake
- 1 tbsp Mirin
- Cut 3 vertical slices into the chicken.
- (Cut as deep as possible without cutting through to the skin).
- Julienne the shiso leaves.
- Stuff the shiso leaves into the cuts in the chicken.
- Marinate in sake, soy sauce, and mirin.
- Heat a frying pan and pan-fry the chicken with the skin side up on high heat until browned.
- Lower the heat to low and add a little bit of water.
- Cover with a lid and steam fry.
- Flip over the chicken so that the skin is thoroughly fried.
- Coat the chicken with the marinade from Step 2.
