Carrot-Pecan Cookies

  1. In a bowl, combine flour, baking powder, baking soda, salt, cardamom and cinnamon; set aside.
  2. In a second bowl, beat butter with brown sugar until light and fluffy.
  3. Add egg and vanilla extract and beat well.
  4. Add flour mixture in 2 or 3 batches.
  5. Stir in carrots, pecans and raisins.
  6. Drop by tablespoons, 2 inches apart onto lightly greased cookie sheet.
  7. Bake in 325u0b0 oven for 20 to 25 minutes.
  8. Makes 3 dozen.
