Carrot-Pecan Cookies
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 3/4 tsp. ground cardamom (optional)
- 1/4 tsp. ground cinnamon
- 1/2 c. butter, softened
- 3/4 c. light brown sugar
- 1 egg
- 1/2 tsp. vanilla extract
- 1 c. grated carrots
- 1 c. chopped pecans
- 1/2 c. raisins
- In a bowl, combine flour, baking powder, baking soda, salt, cardamom and cinnamon; set aside.
- In a second bowl, beat butter with brown sugar until light and fluffy.
- Add egg and vanilla extract and beat well.
- Add flour mixture in 2 or 3 batches.
- Stir in carrots, pecans and raisins.
- Drop by tablespoons, 2 inches apart onto lightly greased cookie sheet.
- Bake in 325u0b0 oven for 20 to 25 minutes.
- Makes 3 dozen.
