Fresh Strawberry Cake
- 1 cup mashed strawberries
- 2 1/2 cup ap flour
- 1/2 tsp salt
- 2 1/2 tsp baking powder
- 1/2 cup butter
- 1 1/3 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese
- 1/2 cup butter
- 3 1/2 cup powdered sugar
- 1 tsp vanilla extract
- Preheat oven to 375F and prepare 9x13 pan
- In a medium bowl: mix flour, salt, baking powder; set aside
- In a mixing bowl: cream butter and sugar until light and fluffy.
- Beat in eggs one at a time (beat well after each).
- Add vanilla and blend well.
- Slowly beat in about 1/3 of flour mixture into creamed mixture with half of the strawberries
- Beat in another 1/3 of flour mixture and rest of strawberries
- Blend in remaining flour mixture and beat until smooth
- Bake 25-30 minutes.
- Cake will sprink back when lightly touched.
- Cool on rack.
- Beat cream cheese and butter.
- Add powdered sugar and vanilla.
- Beat together until smooth
- Frost and enjoy!
